When I think about breakfast, my favorite combination just about every time is eggs, cheese, and green chili. I absolutely love that combination. Add some pork sausage, top it off with some probiotic sour cream and perfectly ripe avocados on the side? Yes please! I don’t think it gets any better than this cheesy sausage and green chili egg bake!
This sausage cheese and green chili egg bake was fun to make, full of nutrient-dense ingredients, and didn’t take all day. It took a total of 10 minutes to prepare, and 50 minutes to bake. It’s a perfect meal to quickly prepare while you sip your morning cup of joe and have ready to serve when folks roll out of bed.
The filling is gratifyingly dense, so a little goes a long way, unlike the souffles that I have made which are a bit lighter and fluffier. Every bite here is filling but literal perfection…full of gooey cheese, tender meat, and spicy green chilis.
Add some kimchi sriracha on the side, to spice it up a notch, if desired. I did, it was an amazing addition. Oh, and don’t be surprised if you wake up craving more the next morning! You will, and that is great because this dish makes a lot, warms up like a dream the next day, almost better than the day before.
Why we love this recipe
- The yolks from the organic pasture-raised eggs have high levels of folate which helps with proper nerve function and vitamin B12 which is necessary to make oxygen. They also are high in choline which has strong anti-inflammatory properties and is important for brain development. Yolks also are rich in vitamins A, D, E, and K and are rich in minerals like calcium and copper.
- The addition of sliced organic avocados adds a nutrient-rich superfood to the dish! They are full of essential nutrients like potassium, heart-healthy fats, and fiber to help keep your gut healthy. They are also high in antioxidants which are good for all-around health.
- Regular organic sour cream is delicious but using probiotic sour cream that has live microbes adds health benefits to this meal that include improved digestion and immune function. It is also particularly high in bioavailable vitamin A, which is essential for our eyesight and immune system and may help decrease the risk of macular degeneration. Sour cream in general, is a good source of calcium and phosphorus which both play a vital role in strengthening our bones.
- Most cow milk you find in grocery stores has both A1 casein and A2 casein protein. A2 milk is regular cow’s milk and is similar nutritionally to A1/A2 cow milk, but only has the A2 casein protein. A2 milk is said to be more tolerable for those who have sensitivity to cow’s milk that includes A1 casein. For some, A2 milk is easier to digest and creates less gut discomfort, which is why I chose to use it in this recipe, to focus on good gut feels throughout the meal.
Sausage, Cheese, and Green Chili Egg Bake
12 Servings
Ingredients
1 lb pasture-raised pork sausage
2 cups organic pepper jack cheese, shredded
3 cups organic raw sharp cheddar cheese, shredded
1 cup organic mozzarella cheese, shredded
½ cup A2 4% whole milk
1 ½ cup AP gluten-free flour
1 ½ cup organic cottage cheese
9 organic pasture-raised eggs
1/3 cup grass-fed butter, melted
2 cans green chilis, diced
salt and pepper, to taste
Optional: sliced organic avocado, probiotic sour cream, kimchi sriracha
Directions
Heat oven to 375°F
Spread ½ of the melted butter in a 9×13 inch pan (be sure to cover the sides too)
In a large bowl, combine the remaining ingredients and stir well.
Pour into a 9×13-inch pan.
Bake at 375°F for 50 minutes or until golden brown and a knife inserted comes out clean.
