Avocado Chocolate Pudding

We originally made chocolate avocado pudding during the Natural Food Chef program. Our first attempt at this recipe had every single one of us amazed at how good it was. It tastes just like chocolate pudding, and it is made with avocados! Once you taste it, you may consider enrolling in the program, if you haven’t already. It really is mind-blowing delicious (like so many of the recipes we make in the program!).

This one is a hit for any occasion.

During the NFC program, students have different projects they are required to complete. One of the assignments is the opportunity to host a dinner for eight or more folks with the freedom to create a unique menu for the event. I undoubtedly chose to make this chocolate avocado pudding for the dessert. Without a doubt, I knew it would be a hit, and boy was it!

My dear friend, who I know has a big sweet tooth told me that it was her favorite dessert ever. She didn’t just say it once, she was saying it after every bite! When I told everyone what was in it, their minds were blown. “It tastes just like chocolate pudding! Not “healthy” chocolate pudding, but the real deal!” they all said.

Before all of my guests left for the evening, my friend’s husband took me aside and asked for the recipe. He wanted to surprise her and make it for her at their upcoming anniversary dinner the following month. How cool is that?

Why we love this chocolate pudding:

This avocado chocolate pudding is thick and creamy and sweet, just like you would expect pudding to be. The ingredients are simply placed in a food processor and blended to perfection. After it is chilled in the refrigerator for a little bit, boom, you have the most amazing healthy dessert that no one would ever think was providing nourishment! Because it is made with avocados, that are high in good fats, vitamin E, vitamin K, potassium, fiber, and magnesium, this amazing fruit adds really good health benefits to eating this delicious dessert!

Putting a few pieces of fruit, mint and a sprinkle of Maldon salt on top makes it so decadent and adds just the right amount of savory to complement the sweet. You don’t have to add anything, it is amazing on its own, but the toppings really do step up the presentation and delicacy of this special treat.

I highly recommend serving this at your next gathering, everyone will be so impressed, and delighted once you share what the main ingredient is! 😊

Avocado Chocolate Pudding

6-8 Servings

Ingredients

2 avocados, very ripe, pitted

1/3 to ½ cup honey

6 oz. dark chocolate, melted

2 teaspoons vanilla extract

½ teaspoon sea salt

½ to ¾ cup warm water 

Directions

Step 1

Puree avocado in a food processor until creamy.

Step 2

Add honey, melted chocolate, vanilla, salt and blend until well incorporated.

Step 3

Gradually add the warm water until desired consistency (note; pudding will firm up quite a bit when chilled).

Step 4

Spoon into individual bowls and chill for at least 1 hour before serving.

Step 5

Garnish with 3 raspberries on each serving, along with a mint sprig and a sprinkle of Maldon salt and serve.

Suggested Variations-

Add a ripe banana and blend.

Thin with coconut milk instead of water and top with toasted coconut.

Garnish with candied ginger or orange.

Add a flavored liquor in place of some of the water.
